White Chocolate and Peppermint Cookies

These WHITE CHOCOLATE AND PEPPERMINT COOKIES are yummy! I can’t think of much more to say than everyone is going to enjoy this wintry cookie.

1 cup butter
1 cup light brown sugar
1/3 cup granulated sugar
3 cups all-purpose flour
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups white chocolate chips
3/4 cup peppermints, crushed

1. Preheat oven to 350 degrees. Grease cookie sheet if needed or use Sil-Pat.

2. Cream together butter, brown sugar and granulated sugar until smooth. Stir in eggs and vanilla extract. Sift together flour, baking power, baking soda and salt in another bowl first before stirring into mixture. Add white chocolate chips and peppermint.

3. Roll into one inch balls.

4.. Bake for about 10-12 minutes . Take out of oven and lightly press down while still warm. You can use the back of a fork it you like. Place on wire rack to cool.
SERVING: 48 cookies | TIME: 25 minutes
