Roasted Beets with Walnuts and Goat Cheese
Although many people cringe at the thought of eating beets, these purple root vegetables are loaded with essential vitamins. Beets contain vitamins A and C, calcium and iron. This simple but delicious ROASTED BEETS WITH WALNUTS AND GOAT CHEESE could put you back on the track to eating beets on a more regular basis.
3 large beets
1/2 cup walnuts, chopped
2 ounces goat cheese
1. Pre-heat oven to 450 degrees
2. Cut off leaves of beets and wrap in aluminum foil and cook for 45 minutes or until knife can pierce through to the center.
3. When done place in a cold water bath. Let it set for one to two minutes and then carefully remove skin. If it does not come off then peel with knife. Cut up into 1/2 cubes and place in mixing bowl.
4. Add walnuts and goat cheese and stir. Salt and pepper to taste.
