Insalata Caprese with a Twist

Then when I was walking through the Green Market to purchase basil, I came across this deep, purple-colored variety of basil. I knew it would add an interesting twist to the classic INSALATA CAPRESE.


3 – Medium tomatoes
1 pound – Mozzarella
1 – Bunch of purple basil
1 tablespoon – Extra virgin olive oil


Thinly slice tomatoes and mozzarella. Arrange on the plate with mozzarella on the bottom, then one basil leaf and a tomato slice. Drizzle with olive oil and lightly salt. and pepper.
SERVES: 4 | TIME: 10 minutes
