Pumpkin Cookies with Cinnamon Ice Cream
One of my favorite things about autumn is anything pumpkin. You can make these PUMPKIN COOKIES WITH CINNAMON ICE CREAM.
4 cups all-purpose flour
1 cup butter
1 cup light brown sugar
1/2 cup sugar
1 1/2 cups pumpkin puree
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1. Pre-heat oven to 350 degrees. Grease cookie sheet if needed or use Si-Pat.
2. Cream together butter, brown sugar and granulated sugar until smooth. Stir in eggs, vanilla extract, cinnamon, nutmeg, ginger and pumpkin puree. Sift together flour, baking power, baking soda and salt in another bowl first before stirring into mixture.
3. Using tablespoon size portions, drop onto cookie sheet.
4. Bake for about 9 – 12 minutes while still soft in the middle of cookie. Place on wire rack and cool.
