Cranberry, Walnut and Oatmeal Cookies

Autumn makes me think of cranberries and Thanksgiving, so I thought this would be a good time to give you the recipe for delicious CRANBERRY, WALNUT AND OATMEAL COOKIES.

1 cup – butter
1 cup – light brown sugar
1 cup – sugar
3 cups – all-purpose flour
2 eggs
2 teaspoons – vanilla extract
1 teaspoon – baking powder
1 teaspoon – baking soda
1 teaspoon – salt
1 1/2 cups – rolled oats
1 cup – chopped walnuts
1 cup – dried cranberries

1. Preheat oven to 350 degrees. Grease cooking sheet or use Sil-Pat.

2. Cream together butter, brown sugar and white sugar until smooth. Stir in eggs and vanilla. Sift together flour, baking powder, baking soda and salt. Once done,  sift into mixture. Stir in cranberries, walnut, and oats.

3. Roll into small tablespoon-size balls and place on cooking sheet. Leave room for expansion.

4. Bake for about 12-14 minutes. Take out of oven and lightly press down while still warm. Place on wire rack to cool.

SERVING : 25 | TIME : 25 minutes
